Taco Soup Recipe

I’m sure I’m not the only one who struggles to find meals that the entire family will eat without complaining about. Not only do I have incredibly picky kids but my husband is just as picky! I’m typically hesitant to try new recipes because it’s honestly so disappointing when I put in tons of work only for the kids to complain and refuse to eat it. So when I find a recipe the entire family loves it feels like I struck gold!

This season of life is incredibly busy. From trying to juggle two different school schedules, nap schedules, my daughters 5 different dance classes, keeping up with the house and all of my work- there isn’t a ton of time for meal prep. But I have a family of 5 to feed so it’s not an option not to cook. That’s why crockpot meals are my favorite! I love that this soup can be a dump and go meal with just a few simple swaps!

Depending on what I have on hand I will either use rotisserie chicken for a dump and go option or I will cook ground beef or turkey. I like to sauté a sweet onion to add to the soup because It gives so much flavor and makes the soup taste so much better. But if you are in a rush or don’t want the extra dishes then you can skip this step! All of the other ingredients I keep on hand in the pantry, I also keep ground beef in the freezer so this can be thrown together on days I didn’t plan in advance.

Recipe:

  • 1 full box of Chicken Bone broth (Can also use vegetable broth)

  • 1 can of sweet corn ( drained and rinsed)

  • 1 can of black beans ( drained and rinsed)

  • 1 sweet yellow onion sautéed until golden brown

  • 1 heaping tsp diced garlic

  • Ground beef ( can also used rotisserie chicken for dump and go)

  • 1 can of diced tomatoes ( fire roasted tomatoes give extra flavor!)

  • Taco Seasonings:

    • 1 tbs chili powder

    • 1 tsp ground cumin

    • 1 tsp ground paprika

  • Optional Toppings:

    • Sour Cream

    • chopped cilantro

    • shredded cheese

    • tortilla chips

    • avocado

Start by combining broth and canned tomatoes in your crockpot. Drain and rinse both corn and black beans then add to crockpot as well.

Dice a yellow onion and sauté with olive oil and one heaping teaspoon of minced garlic. I also like to add the taco seasonings to the onion because I think it brings out more of the flavor! Then I scrape it all into the crockpot once the onion is fully cooked.

If you are cooking your meat now would be the time to do that or ad your rotisserie chicken to the crockpot.

I will normally stir everything together and take a taste test to see if I want to add more seasonings! I cook this soup on low for 6 hours or on high for 4 but since everything is pre-cooked it can definitely be for less if you’re in a time crunch.

When it’s time to serve the soup I will stir in sour cream and add the toppings listed above. Since my kids don’t like spicy foods I add more sour cream in their bowls to help tone down the spices.

After I serve the kids I normally will add more spices and some hot sauce for my husband to make it spicier! This is what I love about this recipe- It’s so easy to customize for each persons preferences.
