Bean-less Chili Recipe

This is one of my all time favorite meals! My husband and I both like chili but don’t like beans so I have spent the last 5 years perfecting this recipe. It all started when we tried out a Keto Diet and I found a Keto Chili recipe with no beans in it! That recipe has now evolved into this one and become a weeknight staple in our house! Even our kids love it ( with some slight modifications).


Recipe:

  • 3 Bell Peppers

  • 1 Sweet Yellow Onion

  • 1 package of ground beef or ground turkey ( about 2 pounds)

  • 2 or 3 8oz cans of Diced Fire Roasted Tomatoes

  • 2 heaping tablespoons tomato paste

  • 2 heaping tablespoons minced garlic

  • 1 cup water

  • Chili seasoning ( adjust amounts to your preference)

    • 1 tbsp Chili powder ( I normally add extra!)

    • 1/4 tsp cayenne pepper

    • 1/2 tsp Onion granules

    • 1 tsp ground cumin

    • 1 tsp Salt ( I sometimes add extra)

  • Spicy Ingredients:

    • Ghost Scream Chili Garlic Paste ( about 1 teaspoon)

    • Ghost Scream smoked salt ( just a pinch or 2)

  • Toppings:

    • Sour Cream

    • Avocado

    • Shredded cheese

    • Tortilla chips

Start by chopping the bell peppers and onion then add them to a pan with oil and sauté. Cook your ground beef or turkey. while those are cooking add your other ingredients to the crockpot. I like to add 1 of the tablespoons of garlic to the veggies while they cook and the other tablespoon is added directly to the crockpot. I also tend to cook extra ground beef to have as leftovers for lunches and dinners throughout the week so sometimes I add some of the seasonings here as well! Once those are thoroughly cooked add them to the crockpot. Set it on high for 4 hours or low for 6.

I always wait to add the Spicy Ingredients until after the kids have eaten (and I put aside some leftovers for them). Then I add the rest for my husband and I! We love all of the different hot sauces and pastes that Ghost Scream makes and it honestly will add so much flavor to your chili! I am not affiliated with them in any way just a big fan of their stuff! The measurements I added in the list above are just what we prefer ( sometimes my hubby adds more it his bowl!) But they are very powerful so a little goes a long way! I will typically let it cook a little longer after adding these to let the flavor settle in!

Once it’s time to eat I will add the above toppings depending on each persons preferences!

I always taste test along the way and will add more or less seasoning. I’m awful at measuring how much I use so you will want to taste test for yourself as well!
